Winemaking

Our winemaker selected from various pockets of grapes and batches in the cellar to craft this elegant and terroir-expressive wine that reflects the somewhat mysterious heart of the Swartland’s natural attributes. The white grape blending components for this flavourful wine all derive from old vineyards, namely Chenin Blanc, Viognier and Chardonnay. As per normal practice on Lammershoek, they are farmed dry-land. Selected grapes from various vineyard pockets were handpicked early morning. The three cultivars were handled separately in the cellar and the final blend was only made-up after eight months of aging. Meanwhile, the wines had been fermented and aged in various size concrete and stainless-steel tanks and oak barrels. A year of bottle-aging followed before release.

Tasting Notes

Golden wheat. White peach, zesty lemon and lime, with pleasing floral undertones. Elegant yet bursting with flavours of peach, quince, Granny Smith apple. Minerally undertones with hints of spice.
