Winemaking

Grapes were harvested late in the cool autumn from Table Mountain sandstone soils, benefiting from morning mists coming off two nearby water bodies that favored noble rot development. The affected Viognier bunches were hand picked in small quantities, then gently whole-bunch pressed. Fermentation proceeded in stainless steel tanks to preserve delicate floral and fruit aromatics. The wine matured for 6 months partially in oak, enhancing complexity while maintaining vibrant freshness.

Tasting Notes

On the nose, this luscious late harvest wine reveals smoky wild honey, followed by bright notes of tangerine and musk melon. The palate delivers a vibrant acidity that balances the sweetness perfectly, ensuring it never becomes cloying. Initial flavors include grilled pineapple drizzled with lemon and honey, evolving into nuanced layers of Frangipane paste, golden sultanas, ruby grapefruit with brown sugar, and grilled elements. The finish evokes the warmth of a Christmas mince pie accompanied by a glass of Drambuie, featuring crisp buttery pastry and candied citrus peel, all supported by racy acidity.

Special Notes

The late ripening in the cool of autumn, subjects the Viognier bunches to morning mists from the two water bodies, the perfect conditions for Noble rot. The soils are Table Mountain Sandstone, known to enhance the floridity and fine floral fragrance of wines grown on them and works well with the already floral nature of Viognier.
