Winemaking

Crafted exclusively from Pinot Noir clones planted in a 2-hectare block, the grapes were hand harvested to ensure optimal ripeness and freshness. The juice underwent gentle pressing with approximately 10% skin contact to achieve the delicate pink hue characteristic of this MCC Rosé. Fermentation took place in stainless steel tanks with indigenous yeasts to preserve fruit purity, followed by 6 months aging on lees in barrel under crown cap to enhance complexity and texture. Riddling and disgorging after 2 years fermenting in bottle, were meticulously conducted to produce fine bubbles and a clean, elegant finish.

Tasting Notes

This delicate rosé displays a pale onion skin color with inviting aromas of white pepper, kumquat, and subtle smoky nuances. The palate opens with a focused entry, revealing layers of fresh red berries complemented by a soft mid-palate ripeness and seamless texture. A lively acidity lifts the wine, while a savory twist adds complexity, making it both refreshing and nuanced. This rosé is a beautiful expression of Mourvèdre from the Elgin region, balancing elegance and vibrancy.
