Winemaking

After careful selection and hand harvesting, our Sauvignon Blanc fruit from vineyards in Elgin, was transported by means of refrigerated truck to our winery and further cooled overnight in our cold room to 5°C. About a third of the total harvest underwent 12 hours’ skin contact to enhance the development of unique Sauvignon Blanc characteristics. The juice was tank fermented in two lots by different yeast strains to enhance complex fruit aromatics. Lees contact for a period of six months after fermentation adds texture and richness on the midpalate and finish. The wine was bottled in November 2018. A portion of the Semillon, which was fermented and matured in old barrels adding depth and richness, was included in the blend; the total Semillon component amounting to 12.5%.

Tasting Notes

A hint of cut grass, and gooseberry on the nose. A well-balanced blend of apricot, green apples, pineapples and pears. Dry and light acidity with a smooth and creamy silky finish.
