Winemaking

After careful selection and hand harvesting, our Sauvignon Blanc fruit from vineyards in Elgin was transported by means of refrigerated truck to our winery and further cooled overnight in our cold room to 5°C. About a third of the total harvest underwent 12 hours’ skin contact to enhance the development of uniquely ‘green’ Sauvignon Blanc flavours – grassy; crunchy, fresh split peas & asparagus, this component fermented in tank by a selection of yeast strains to enhance complex fruit aromatics of granadilla, guava, peach & Granny Smith apple. Lees contact for a period of six months after fermentation adds texture and richness on the midpalate and finish. Of our riper component harvested 10 days later, approximately 30% was fermented and matured in old barriques adding depth and richness. The inclusion of hand-harvested, sun-kissed Semillon bunches, these then whole-bunch pressed and fermented in seasoned French oak barrels add body, texture & a delectable yellow fruit flavour to the overall blend.

Tasting Notes

Shows grassy aromas reminiscent of crunchy split peas and asparagus, layered with complex fruit notes of granadilla, guava, peach, and crisp Granny Smith apple. Fermented with selected yeast strains and aged on lees for six months, it offers a textured and rich mid-palate balanced by vibrant freshness. The finish is clean and lingering, with refined fruit complexity and subtle creamy richness.

Each wine is created with much thought and care to ensure uniqueness and individual character.

Our Meinert Sauvignon Blanc certainly speaks to the more serious side of Sauvignon Blanc while having enough youthful charm to appease all palates at every occasion.
