Winemaking

Pristine fruit from our Elgin vineyards was transported in a refrigerated truck to our winery and every measure imaginable was employed to ensure minimal oxidation. About one quarter of the grapes were given 24 hours’ skin contact, a portion crushed and pressed immediately and a small batch was whole-bunch pressed. The juice was tank fermented in two lots by different yeasts to develop ‘typically’ Sauvignon-fruit flavours. As passionate as we are about Sauvignon Blanc, experience has taught us that despite natural fermentations producing complex and interesting wines, this is not always beneficial to Sauvignon Blanc. Lees contact of eight months after fermentation ensures richness and texture on the midpalate. The wine was bottled in December 2018.

Tasting Notes

Fresh and crispy with light tropical fruit flavours. Citrus on the palate, along with lime, green pepper and asparagus. Light acidity and a silky refreshing finish.
