Winemaking

Hand-harvested on 1 March 2022. Destemmed and fermented in an open top fermenter. Pressed on the 10th day. Fermentation was allowed to complete in a stainless steel tank and then the wine was aged in older oak barrels. 3 months in older oak barrels.

Tasting Notes

10 days of skin contact resulted in a pale coppery colour, after which the wine was aged in older oak barrels for 3 months. Delicate nuances of yellow peach, nectarine and sweet melon with savoury notes of fresh fennel and herbs. The touch of skin contact imparts a velvety texture to a palate rich with sweet fruit flavours balanced by a fresh acidity, resulting in an intriguing and beautiful wine.

Special Notes

Pinot Gris is the white, well-travelled off-spring of the black Pinot Noir grape. The English translation of the French ‘gris’ is grey, and refers to the greyish-blue hue of the grapes.
