Winemaking

Grapes were hand harvested from selected blocks in Elgin. The wine was fermented with ambient yeasts and aged for 11 months in 20% new and 80% seasoned French oak barrels, air-dried for 36 months with fine grain and light to medium toast. Malolactic fermentation occurred in barrel, softening the palate texture. The wine was lightly filtered before bottling to preserve purity.

Tasting Notes

This Pinot Noir shows a bold, rich color hinting at a more substantial style. The nose unfolds spicy oak, violets, and forest floor aromas. Silky on the entry, the mid-palate is remarkable with baked plums and morello cherries. Youthful cocoa powder tannins develop alongside notes of dark chocolate and ripe strawberries. The wine reveals elegant layers of cherry, raspberry, mushroom, and forest floor, complemented by vanilla and baking spice from French oak aging. It offers balanced acidity and soothing tannins, giving it structure and depth.
