Winemaking

Fermented with natural yeasts, made in classic low intervention manner, no extended skin maceration. Aged for 24 months in new (15%), second and third fill French Oak barrels. In keeping with a naturalist approach to winemaking, this wine is lightly filtered prior bottling in the spring of 2019 and as such a harmless sediment may develop over time.

Tasting Notes

The dense deep red color is matched by a nose showing red berries, typical Cabernet herbs, spicy toasted oak, and tobacco. The palate is mouth-filling but soft on entry, lingering gently and long on the finish. This wine balances weight and elegance with ripe tannins and complex savory nuances, ideal for pairing with rich, robust meats.

Vineyards

Reintroduced to our range in 2006, Cabernet Sauvignon has replaced our former Bordeaux blend Devon Crest, which is still fondly mourned. I believe Cabernet Sauvignon is particularly suited to our vineyard and thus important to showcase. Our soils, which are deep and well drained with high clay content, and the low yields define our wines. Vines receive supplementary irrigation. Average yield 5 tons/ha. This is also the first vintage in which fruit from our sister property of Fleurbaix in Stellenbosch has been included in the cuvee.

Cabernet Sauvignon (90%) with a dollop of Merlot (5%), Petit Verdot (4%) and a smidgen of Pinotage for good measure.
