Winemaking

Fermented with natural yeasts & made in a classic, minimal interventionist manner, with a focus on purity of fruit and fine, silky tannins. Pump overs two to three times a day during the course of fermentation and extended post-fermentation maceration, where the fermented wine is left on its skins for up to three weeks after the completion of alcoholic fermentation allowing for the evolution of Cabernet Sauvignon’s finer, silky tannin expression. Aged for 24 months in a selection new (15%), second and third fill French Oak barrels, most of which is sourced from the Vosges forests bordering Alsace. In keeping with a naturalist approach to winemaking, this wine is lightly filtered prior bottling in the spring of 2019 and as such a harmless sediment may develop over time.

Tasting Notes

Dense and fresh deep red in color, the wine displays expressive aromas of ripe red berries, typical Cabernet herbs, spicy toasted oak, and tobacco. The palate is mouth-filling yet soft on entry, with fine tannins giving a smooth, balanced texture. The finish is gentle and lingering, showcasing complexity and refined structure.

Vineyards

Produced from one of Stellenbosch’s finest Cabernet Sauvignon sites & grown on our sister property, Fleurbaix, along the north-facing banks of the Eerste River.

A mere 6.5km as the crow flies from our Devon Valley property, the mesoclimate of our Cabernet block on Fleurbaix differs notably from cold, winter frosts to toasty, hot summers and where the granitic soils express themself through beautiful floral, violet aromatics, and fine, silky tannins. Opening the vineyard canopy on the east-facing side adds further depth & complexity to a smorgasbord of flavours.
