Winemaking

Grapes, from vineyards selected for their exceptional quality, were picked at optimum ripeness. After de-stalking and crushing, the juice was fermented dry in open fermenters, on the skins, for 7 days at 250C. Regular pump-overs ensured optimal colour extraction. Each varietal component underwent malolactic fermentation and maturation separately in new 225L French oak barrels for 8 months. The best barrels were selected to make up the final blend, which then matured for a further 10 months in new French oak.

Tasting Notes

Dense ruby hues lead to fragrant aromas of plums, black cherries, black fruit pastilles, and a subtle vanilla note. The soft, velvety tannin structure and delicate nature reflect the vintage’s elegance. Balanced acidity adds freshness, while the palate reveals flavors of red currants, cinnamon, and mulberries. Integrated new oak characters harmonize perfectly with the fruit spectrum, culminating in a polished and refined finish.

Our flagship range celebrates the early years of winemaking when wines were stored in caves during maturation and the recent discovery of a series of caves below our very own cellar. The grapes for the wines are meticulously hand-selected from the very best vineyard blocks and we gently handle the grapes in the cellar with minimal disruption. The range consists of a Chenin Blanc, Cabernet Sauvignon, Pinotage, Cape Blend and Shiraz, with our red wines matured in small first-­fill French oak barrels before being bottled.
