Winemaking

Grapes, from a single vineyard selected for its exceptional quality and low yields of less than 8 tons per hectare, were picked at optimum ripeness. After de-stalking and crushing, the juice was fermented dry in open fermenters, on the skins, for 7 days at 250C. Regular pump-overs ensured optimal colour extraction. Post fermentation, the wine was kept on the skins for a further 7 days to facilitate the polymerisation (softening) of the tannins. Malolactic fermentation took place in new 225L French oak barrels. The wine was then racked and returned to the same barrels for a further maturation period of 18 months.

Tasting Notes

Blackcurrant, raspberry, oregano, and tomato cocktail scents fill the glass, complemented by a touch of smoked meats in the background. The palate features beautiful ripe, finely-grained tannins and a creamy mid-palate with juicy flavors of mulberries and choc-dipped cherries. A savory edge on the lengthy finish completes the delicious profile, offering balance and elegance.

Our flagship range celebrates the early years of winemaking when wines were stored in caves during maturation and the recent discovery of a series of caves below our very own cellar. The grapes for the wines are meticulously hand-selected from the very best vineyard blocks and we gently handle the grapes in the cellar with minimal disruption. The range consists of a Chenin Blanc, Cabernet Sauvignon, Pinotage, Cape Blend and Shiraz, with our red wines matured in small first-­fill French oak barrels before being bottled.
