Winemaking

Our Shiraz sites range from plantings as early as 2001 to as recent as 2013 including vineyards near Hermon planted on schist soils, and vineyards in the Bovlei growing in decomposed granite. A new addition since 2022 are the grapes from our Voor-Paardeberg farm which benefit from the cool, late afternoon breezes.

Grapes are hand harvested and destemmed before the onset of fermentation which is done in stainless steel tanks. Pump-overs are utilized for colour and tannin extraction. Before alcoholic fermentation is complete, it is pressed to make sure that the tannin expression is fine and subtle. A portion of the wine is matured in French oak for 4 months to create a complex wine with supple tannins.

Tasting Notes

Ruby red in colour. The bouquet is typically expressive, with aromas of dark fruits such as blackberry and plum, along with hints of spice such as white pepper. Medium-bodied with a rich mouthfeel. The dark fruit flavors on the palate are complemented by peppery spice and hints of licorice with smooth tannins and a balancing acidity.

Special Notes

Shiraz is one of the most widely planted red wine grape varieties in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain from whence the grape most likely originated.

Wellington, with its long warm summers, is also the ideal terroir for this generous cultivar, and we are able to produce distinct and spicy wines from the cultivar.

This is a wine specifically for those who taste with a food-oriented palate. It is a light, fresh wine with loads of character.
