Winemaking

Grown in Table Mountain sandstone soil with 10% clay, from four selected east and north-facing blocks. Traditional open-top fermentation with ambient yeast and delestage technique maximized extraction. Barrel aging in Burgundian oak barrels imparts subtle oak nuances while preserving Pinot Noir’s delicate flavor spectrum. Light filtration before bottling maintains the wine’s integrity and finesse. Wine matured for 2 years in bottle before release.

An alluring Pinot Noir that opens with vibrant notes of strawberry and cherry, bursting with freshness and lifted by lively acidity. Special Note

The 2022 vintage Pinot Noir comes from a 3.25ha vineyard planted to two different clones. 2022 presented a largely favorable year for winemaking. While rainfall was slightly below average, particularly early on, it fostered concentrated grapes with good acidity. Moderate temperatures throughout the year ensured even ripening, resulting in wines expected to showcase vibrant fruit and balanced structure. A drier winter also aided in healthy vine growth.
